20 NAVY SUPPLY NEWSLETTER SUMMER 2010 The competition was conducted at the Melbourne Exhibition Centre. Due to the number of Stewards in ISC76, a volunteer from the ISC75 was required to fill a vacant position in one of the teams. PTE Tennant came to the rescue and joined ISC76 for the day. Both teams were entered into the 'fine dining' section of the competition. Teams competed against competitors from an external training provider. Competition on the day was both exciting and tense. Although the Initial Stewards had only been training for a short period, the standard of their hospitality skills was a credit to themselves, their ADF instructors, Chisholm TAFE and the Australian Defence Force. The 'fine dining' on the day was close with only a few points the difference between SMN*STD Scott's team and external training provider, who won the daily competition and was the overall winner of the Fine Dinning Culinary Challenge for Victoria. This demonstrated not only to the Hospitality industry but to the Stewards the high standard of training and support the Defence Force provides to their members. The day gave the Stewards and SMN*CK Johnston the opportunity to experience the event not only as competitor, but as member of the hospitality industry with stalls displaying their new products and techniques in our ever changing field of choice. Team Leader SMN*STD Smith, SMN*STD Thomson, SMN*STD Williamson and SMN*STD Boyle were awarded Bronze. Team Leader SMN*STD Scott, SMN*STD Stephenson, SMN*STD Navales and PTE Tennant were awarded Silver. SMN*CK Johnston entered the B4, Beef and Lamb dish event. This was open to anyone from a 1st year apprentice to a fully qualified chef. SMN*CK Johnston impressed the judges with a high standard of cooking ability and skill. The judge was surprised to learn that SMN*CK Tim Johnston had commenced his training 4 months ago. SMN*CK Johnston received a Merit award, an honour rarely given to a junior chef. With the completion of the events all were able to enjoy the exhibition. The most visited section by the students (and the instructors) was the sweets section. Australian Culinary Challenge for Victoria On Wednesday 15th September 2010, Initial Stewards Course (ISC) Session 76 from Australian Defence Force School of Catering, HMAS Cerberus competed in the Australian Culinary Challenge for Victoria.
